Parsley, Kale and Berry Smoothie by Janell Rose
April 2012 BONAPPETIT had this Smoothie Recipe and Eileen is over the moon over the recipe. She is making nearly every day. On Friday Morn. May 11, JR and I drove to Keller and parked our van to ride with Paul and Eileen to AR for Caty's graduation and bring back her furn. Paul was pulling a 17 foot trailer - it was bump, bump all the way over and back. (My rotator cuff arm has been so sore it hurts to move this past week.) Anyway - when we walked in Eileen had big smoothies waiting for JR and I - that was our breakfast and it lasted most of the day without hunger.


Puree 1/2 cup (packed) flat-leaf parsley (leaves and stems.) 4 Kale Leaves (center rib removed.) 1 cup frozen organic berries (strawberries, raspberries, blueberries - whatever) 1 banana cut into pieces. 1 tsp. ground flaxseed. and 1 cup water in a blender until smooth (add water if too thick.) Calories 100 Fat 1 G Fiber 4 G.

Eileen varies this by using any flavor of Kifir instead of water. I have been doing the same (I am also hooked on this smoothie - JR said he Not drinking every morn.) This week I purchased a bag of the frozen triple berries at Sam's and been using them. Also frozen blueberries. Use whatever berries you have on hand. The only thing I have not added is the flax as could not find at the grocery store. Oh yes, add honey for sweeting or your substitue if you think too tart. I use honey for JR.
